TASTING NOTES
Primarily Pinot Noir and Chardonnay, we added a splash of Riesling, Gewurztraminer, and Muscat to create a unique and delicious sparkling wine experience. Aged in a combination of steel and barrel, our winemaking team ferments each varietal separately, low and slow, to preserve its fresh, fruity, and floral notes. A short time on its Pinot Noir skins and a little bit of finished Pinot Noir brings out the Sparkler’s vibrant pink color. Once the final blend is complete, we chill it down and let the pros make it sparkle. This wine is finished with a crown cap to make it perfectly accessible anywhere, anytime!

TASTING NOTES
Sauvage Dry is brilliant white gold in color with an open and intense nose. Aromas of fresh white flowers, hawthorn and Meyer lemon. Round palate with white and yellow fruits like peach, lemon and quince. Long and balanced on the finish.

WINEMAKING
Grapes for our Chenin Blanc are sourced from the Clarksburg appellation, referred to as the “Gem of the Delta.” It is an appellation that shows great affinity for Chenin Blanc. The climate has a moderately long growing season and benefits from the maritime influence of the Sacramento River. The Viognier is sourced from Lodi, which has a classic Mediterranean climate, with warm days and cool nights. Natural air-conditioning is provided by the San Joaquin and Sacramento River Delta breezes and produces grapes with natural acidity. Rhône varieties like Viognier adapt well to this exciting appellation. The sparkling wine was made using 96 percent Chenin Blanc for the base wine.
TASTING NOTES
Crisp, bright, and vivacious, Sparkling CB+V is an aromatic wine boasting a bouquet of pear, green apple, and honeydew melon complemented by lime, nectarine, lemongrass, and apricot. The entry is bright and fresh, exhibiting flavors of green apples, lemon, lime, and lychee. The wine has beautifully balanced, crisp acidity, with a refreshing and slightly creamy note on the midpalate. The fine bubbles lift the aromas and flavors and carry them to the finish.

Strawberries and Rainer cherries leap from this 2020 Vintage Brut Rosé with zesty acidity, fleshy volume, and strong character. This vintage’s warmth and dryness allowed for us to play with youthfulness through time en tirage, intentionally creating another perspective of approachable Brut Rosé sparkling wine that is ground yet spunky.

TASTING NOTES
Nose: Meyer lemon blossom, baked brioche, pear and a hint of green apple with vibrant minerality. Palate: Fresh but complex. Satsuma citrus with echoes of pear. Opens round and creamy, then turns zesty with bright natural acidity carrying through to the finish. Style differentiator: A prolonged en tirage for 41 months gives this wine creaminess and depth. Extremely fine bubbles provide elegance. Dosage: 2021 Chardonnay from Monterey gives this wine some of its fresh character. Vineyards: Monterey, Sonoma and Santa Barbara Counties. The extended growing season in these cooler coastal regions leads to wine of heightened complexity. Being non-vintage allows us to build a desired character that is serious, yet light and fresh. Suggested food pairings from winemaker Jenny Wagner: Cheese puff with biscuit dough, smoked salmon tartine, popcorn or just enjoy on its own.

On the palate, beautifully articulated layers of fresh strawberry, Bing cherry and zesty orange fill the mouth, with a soft, creamy texture and supple mousse carrying the flavors to a bright, lingering finish.
